Cold storage is indispensable for the preservation of apples. Apple is stored in cold storage or controlled atmosphere cold storage. The storage period of apples varies according to the storage time of the fruit, season and variety.
APPLE PRODUCTION SENSITIVITY AND ETHYLENE
This increase is associated with increases in internal concentrations of carbon dioxide and ethylene, respiration, and autocatalytic ethylene production, whose respiration increases during ripening. Endogenous ethylene production can vary greatly between cultivars. Early harvest varieties
have high ethylene production rates and ripen quickly, while those that are harvested late have low ethylene production rates and mature slowly. Apple ripening is promoted by exposure to ethylene.
APPLE COOLING CONDITIONS
Apple is stored at 2 OC with o oc. It is noted that many apple varieties are stored for a long time at -1 ºC to 0 OC and in an environment containing 85-90% relative humidity. Apple freezes at -2 OC. The proportional humidity level of the storage air is important in the cold storage of apples and it should not be allowed to change the humidity rate. 4-6% moisture loss in apples causes wilting, while the increase in storage temperature shortens the storage life, frost damage occurs in apples during storage at very low temperatures. Many apple varieties can be stored for a long time at -1 to 0°C and 85-90% humidity.
STORAGE OF FRESH PRODUCT WITH COLD AIR
Apple producers are well aware that apples respond significantly to both temperature and atmosphere modification. Emphasis and correct application of rapid and pre-chilling, 3 to 6 months of storage for apples, and in some cases longer medium
can provide quality products. However, modern commercial warehouses combine temperature management with atmosphere control for long-term storage of apples. A well-designed cold store, acceptable storage time has been shortened as the quality standards in the market have increased.
